Climate Change Hits Italy’s Burrata Production, Farmers Adapt Now

UPDATE: Climate change is severely impacting Italy’s renowned burrata cheese production, forcing local farmers to adapt urgently. In the Puglia region, where creamy burrata is a culinary staple, cheesemakers like Angelantonio Tafuno are facing critical challenges as extreme temperatures and droughts threaten milk supplies.

This alarming trend is driving cheesemakers to rethink their production methods. Just yesterday, Tafuno, a 32-year-old fourth-generation cheesemaker, highlighted the urgency of the situation. With his herd of Podolica cows, which naturally yield less milk than conventional dairy breeds, he is pivoting towards creating specialty aged cheeses that require far less milk.

The severe heat attributed to climate change has led to a significant decrease in milk production. Puglia, known for producing the majority of Italy’s burrata, is experiencing dwindling milk supplies, pushing farmers to innovate or face dire consequences for their businesses.

Tafuno emphasized, “Developing cheese varieties that require less milk is a way to face what is happening now with climate change.” The shift in production not only addresses immediate economic pressures but also reflects a broader need for sustainability in an industry increasingly threatened by environmental factors.
