Max & Louie’s, a New York diner-style restaurant founded in San Antonio, is set to expand its reach with a new location in Cibolo, Texas. According to a permit application filed with local authorities, the restaurant will be situated at 18124 I-35, currently the site of the Santikos Cibolo movie theater. This location places the new eatery in proximity to popular establishments, including Dutch Bros Coffee and Parry’s Pizzeria & Taphouse.
The restaurant’s founder, Drew Glick, has expressed enthusiasm about this new venture. While he could not provide detailed insights before publication, the permit reveals significant plans for the site. Construction on the 9,111 square-foot space is slated to begin on October 10, 2023, with completion expected by February 26, 2026. The project carries an estimated cost of $2,750,000 and is being managed by the San Antonio-based firm, Sage Architecture, Inc..
Founded in 2016, Max & Louie’s draws inspiration from Glick’s family heritage, particularly his grandfather and great uncle, who were butchers that immigrated from Russia. Their dedication to quality and community is reflected in the restaurant’s ethos. The establishment aims to create an atmosphere reminiscent of traditional butcher shops and delis, where connections and memories are cherished.
The menu features a variety of classic dishes, appealing to both breakfast and lunch crowds. Breakfast offerings include banana-pecan pancakes, Bleeker Street breakfast tacos, and challah French toast. For lunch, guests can enjoy a selection of burgers, such as the B.A.D. Burger and B.L.T. Burger, alongside hearty options like chicken parmesan and bone-in pork chops.
This Cibolo location will mark the second outlet for Max & Louie’s, following its first establishment at 226 W Bitters Road, Suite 126 in San Antonio. While an official opening date has yet to be announced, the community is keenly anticipating the arrival of this new dining option.
