A bakery in Fresno, California, has become a haven for gluten-free food enthusiasts, offering a wide range of delicious options for those with dietary restrictions. The Bakery by Indulge Right, owned by Varouj Kachichian, has been serving the community for over three years, providing 100% gluten-free products in response to the growing demand for safe dining options.
The rise in gluten avoidance is largely attributed to health concerns, including celiac disease and gluten sensitivity. According to the Celiac Disease Foundation, gluten, a protein found in wheat, barley, and rye, can lead to severe health issues for those affected. The gluten-free food market in the United States is projected to reach $7.43 billion in 2024 and double by 2032, according to Fortune Business Insight.
Kachichian’s journey into gluten-free baking began around 2010, when he removed gluten from his own diet due to health issues, including seizures. He realized a notable improvement in his condition and felt compelled to offer similar solutions to others. “There’s a direct correlation between gluten and seizures,” he stated, highlighting the importance of providing safe food options.
Before opening his bakery, Kachichian had over 30 years of experience in the restaurant and bakery industry. He initially hesitated to return to the bakery business due to the demanding hours. However, persistent inquiries from former customers motivated him to reconsider. “I had like four of my past customers saying, ‘so when are you going to open up a gluten-free place?’” he recalled.
A Flourishing Business Model
In 2020, Kachichian opened his first location at the intersection of Shaw and Marks avenues. The bakery quickly gained popularity, attracting patrons from across the region, including those traveling from as far as San Diego. “We get people now from all over the Valley, driving an hour and a half,” he said.
Last year, he expanded the business by opening a second location in Clovis, which offers a wider range of savory lunch items alongside traditional bakery goods. This location provides a space for customers to enjoy their meals, contrasting with the grab-and-go style of the Fresno site.
Among the bakery’s offerings, a customer favorite is the honey whole grain sandwich bread, which presents a gluten-free twist on traditional honey whole wheat. Kachichian aims to continue evolving the menu, with plans to introduce seasonal items and customer-requested dishes such as tuna and chicken salad sandwiches.
Commitment to Gluten-Free Standards
To ensure the products are genuinely gluten-free, Kachichian has registered with the Gluten Free Food Program. This certification process involves strict adherence to safety guidelines, including the use of separate fryers and cooking spaces to prevent cross-contamination. The program conducts periodic testing of products to maintain these standards.
Kachichian’s long-term vision includes supplying gluten-free products to other bakeries and restaurants, making it easier for gluten-sensitive individuals to dine out without fear. He acknowledges the logistical challenges of maintaining a completely gluten-free environment in shared spaces but remains committed to finding solutions.
The joy of his work, Kachichian explains, comes from seeing the happiness on his customers’ faces. “Just making their day, giving them all the options they could have without feeling deprived,” he shared. His mission goes beyond profit; it’s about ensuring that everyone can enjoy delicious food, regardless of their dietary restrictions.
